need taller tire sidewalls 2021 sti. Will a 17" fit over brembo brakes?

I will be using the car for rural driving on a combo of country paved and gravel roads. The 30 series tire that came with the car is just not practical when considering the terrain; rocks and potholes... I don't want to bottom out and break the wheel. I would like to step up to a 40 or 50 series tire. Does anyone have a recommendation on a wheel/tire combo that would clear the calipers and give me a little more sidewall. Thx from Oregon.
