We have a 2014 Forester that just started using oil after 100,000 miles (expected). But we don't know why, after the oil warning light comes on, sometimes it just goes off. Or other times, after stopping and turning the engine off, it doesn't come back on. It definitely needed oil. But why would the warning turn off, or not come back on?

First, check oil more often, and if you aren't using recommended oil API service or weight, solve that problem.
Otherwise, probably just a bad sensor or PVC valve (causing oil consumption). Easy enough to change, usually, and inexpensive. Chances are both need to be changed, and do so before it causes bigger problems. Oil consumption isn't unheard of, but a modern engine should go much more than 100K before that starts. I'm not too convinced how "modern" these boxers are, and am new to owning one.
Two things happening. The unit does not pick up on oil level, it picks up oil pressure, so,,,,,,if you are letting it get low enough to lose pressure, shame on you. Some have an oil level senser as well (not sure about Subaru), but if it is low enough to trip that, it should be too low for the engine to start,,,,,,usually.
Good luck.
