Air Conditioning on 2011 Tribeca

I have a 2011 Tribeca that I've owned since January 2023. I live in NC so I didn't need to use AC for 3-4 months after purchase. The AC worked fine the first summer but starting in 2024, I noticed it wasn't consistently blowing as cool as usual. I've taken it to my local independent Subaru repair shop several times over the last few years and they've done assorted repairs but the on again/off again issue persists.
I know this is gonna sound weird but I've discovered that when it starts blowing less cool air, if I turn the AC off and back on quickly in multiple successions, sometimes 6, 8 or 10 iterations, it starts blowing cold again and it'll be fine for a while. Depending on how long I'm in the car, I may have to do it again later on. Anyone else experienced similar AC issues or is there a known obscure sensor flaw?

Two "long-shot" thoughts: Have a reliable shop check the refrigerant hi/lo pressures - they might be out of spec. Let the shop keep the car if necessary so they can experience the problem, and check the cabin air filter and replace it if necessary.
