A competent carpet layer could probably do this job, but for someone not familiar with getting all the angles correct, I think it would be a daunting task. Remember, too, that it would have to be done leaning over all the while. How's your back?
Just a fair warning that it depends on how your car is set up. I had to replace the carpet in my wife's 2008 Outback and the carpet is a complex assembly of fabric and molded sound deadening material glued to a plastic grid on the floor, not just a flat layer of fabric.
What I did for my car was get a thick leather insert from Amazon that looks great and fits great. price was very reasonable and they'll even monogram it for you.
