Hello out there i have a1990 vanagon with a subaru engine swap it has a 2.5 subaru around 2016 impreza working on new exhaust system wanted to run it without the cat i put in bungs for o2 sensors can this be done or will it effect the air fuel mixture?

The mixture will be affected but there are tuners that can "program" the O2 sensors and CAT efficiency errors.
You may not want that outcome but contact a reputable tuner.
The Vanagon does have enough room under it to mount a CAT providing heat shields protect the under body.
