Did the dealership wreck my car

Took my 2019 Crosstrek in to have the decarbonization service done as soon as I left the engine light came on and I returned. I took the car and a week later the engine light came on again so I took the car back and now the Dealership is telling me all the sensors and catalytic converter needs replaced. The dealership wants 6000.00 for damage I believe they did. I’m looking for advice on how best to handle the issue.

I would get an attorney first thing. What was the mileage when they did this "service"? There are a lot of opinions on this on other forums. Most think it's a bad idea at best; a money grab at worst.

And dealerships wonder why people don't trust them.
 
Yes, I have heard that there can be problems with a GDI (Gasoline Direct Injection) Engine such as your 2019 Crosstrek. Popular YouTube guy, Scottie Kilmer, does a good job explaining why this can be a problem. It is important to know the mileage of your Crosstrek. Here is a link to the video:

BTW, it is not just the PCV, Positive Crankcase Ventilation, no, it is more likely the EGR (Exhaust-Gas-Reciculation) system. The need to decarbonize the intake tract and the engine --- that can also affect other things, for example, it can really plug up a catalytic converter, so replacing it might be necessary.. $6,000 does seem rather excessive, but dealerships are one of the most expensive repair shops around.
 
Be very wary of this guy and his advice. His videos are mostly lies and crap...have been for years.
